We do not send the roasting out. It happens here, in amounts small enough to run out quickly, because a freshly roasted peanut and one that has been sitting for weeks are not the same thing at all. When the smell fills the room, it is ready.

This is where the time goes. Ground and ground again until there is nothing left to feel — no grit on the tongue, no fleck between the teeth. Nothing is added to hold it together, so the oil rises. Stir it back in.

Smooth — Creamy

Ground as far as it will go. Falls off the spoon in one piece and spreads on soft bread without tearing it. If you are choosing one, this one.

Crunchy — Audible

The same base, with broken kernels folded through at the end. For people who want to hear it.

Dark — Smoky

A little longer over the heat. Deeper and drier, with smoke at the back of it. Good with strong coffee.

How to eat it.

  1. On toast

    Sourdough, toasted dark, with banana sliced over the top if you are making a morning of it.

  2. Through porridge

    A spoonful stirred into hot oats, off the heat. It melts into the whole bowl.

  3. Into satay

    Loosened with hot water, lime and a little soy, it is a sauce in under a minute. This is the one people forget.

  4. Straight from the jar

Why has the oil separated?
Because there is no palm oil holding it in suspension. Separation is proof of what is not in the jar. Stir it once and it stays stable for weeks.
Does it need refrigerating?
No, a cupboard is fine. Cold makes it stiff and hard to spread. Only refrigerate it if your kitchen runs warm.
Is it made in a nut-free facility?
It is a peanut butter. It is made in a facility that is almost entirely peanuts, and also handles other tree nuts.
How long does an open jar keep?
Three months open, twelve months sealed. In practice, fourteen days.

A few questions everyone asks.

What are the benefits of peanut butter?

Around 28g of plant protein per 100g, alongside unsaturated fats and fibre. That combination is why it holds hunger off and releases energy slowly. Ours has no added sugar and no palm oil, so what you eat is the nut and a little salt.

Is peanut butter good for building muscle?

A spoonful before training delivers protein and healthy fat together, and unlike simple sugar the energy arrives steadily. Afterwards it blends into a shake with milk and a banana. Watch the portion though — it is not a low-calorie food.

Does it work in a weight-loss diet?

It is calorie-dense, but it is filling enough that it usually stops the snacking. The trick is the portion: one or two spoonfuls a day. Pick a jar with no added sugar or oil, or you lose the point of it.

How do you make it at home?

Roast raw peanuts until the smell fills the room, let them cool, then run them in a food processor. They go to powder, then to a ball, and after a few more minutes the oil releases and it turns smooth. That last stage takes patience, which is where most people stop too early.
